Mushroom and Spinach Stir Fry:

Ingredients: 250g mushrooms (sliced), 2 cups spinach (washed & roughly chopped), 2 cloves garlic (minced), 2 tbsp olive oil, 1 tbsp soy sauce, sesame seeds for garnish.
Method: In a pan, heat oil and sauté garlic until golden. Add mushrooms and cook until soft. Mix in spinach and soy sauce. Stir until spinach wilts. Garnish with sesame seeds.

Mushroom Vegan Tacos:

Ingredients: 250g mushrooms (chopped), 1 onion (diced), 2 tomatoes (diced), 1 tbsp olive oil, taco seasoning, vegan tortillas, salsa, guacamole.
Method: In a pan, sauté onion in oil. Add mushrooms, tomatoes, and seasoning. Cook for 10 minutes. Serve on tortillas with salsa and guacamole.

Creamy Vegan Mushroom Soup:

Ingredients: 500g mushrooms (sliced), 1 onion (chopped), 3 cloves garlic (minced), 2 cups vegetable broth, 1 cup coconut milk, 2 tbsp olive oil, salt, and pepper.
Method: Sauté onion and garlic in oil. Add mushrooms. Once browned, add broth. Simmer for 20 mins. Blend until smooth. Stir in coconut milk. Season as needed.

Mushroom and Quinoa Salad:

Ingredients: 250g mushrooms (sliced), 1 cup cooked quinoa, cherry tomatoes (halved), arugula, 1 tbsp olive oil, balsamic vinegar, salt, and pepper.
Method: Sauté mushrooms in oil. Mix with quinoa, tomatoes, and arugula. Drizzle with vinegar and season.

Mushroom Vegan Pizza:

Ingredients: Vegan pizza base, 250g mushrooms (sliced), vegan cheese, marinara sauce, olives, capsicum, red onion, 1 tbsp olive oil.
Method: Spread sauce on base. Top with cheese, mushrooms, and other veggies. Drizzle with oil. Bake until crispy.

Stuffed Portobello Mushrooms:

Ingredients: 4 portobello mushrooms, 1 cup breadcrumbs, garlic (minced), parsley (chopped), olive oil, salt, and pepper.
Method: Remove mushroom stems. Mix breadcrumbs, garlic, parsley, oil, and seasoning. Stuff mushrooms. Bake at 180°C for 20 mins.

Mushroom and Lentil Loaf:

Ingredients: 1 cup cooked lentils, 250g mushrooms (chopped), 1 onion (diced), 2 cloves garlic (minced), 1 cup breadcrumbs, 2 tbsp flaxseed (mixed with water), herbs, 1 tbsp olive oil.
Method: Sauté onion, garlic, and mushrooms in oil. Mix with other ingredients. Press into a loaf pan. Bake at 180°C for 30 mins.

Dessert – Mushroom and Chocolate Truffles:

Ingredients: 100g finely chopped mushrooms, 200g dark vegan chocolate, 3 tbsp coconut oil, cocoa powder for dusting.
Method: Melt chocolate and oil over a double boiler. Stir in mushrooms. Chill until firm. Shape into truffles and dust with cocoa.
