1. Classic Vegan Spaghetti Carbonara
o Ingredients: 300g spaghetti, 200g silken tofu, 2 tbsp olive oil, 3 garlic cloves (minced), 100g vegan bacon, nutritional yeast, salt, and pepper.
o Method: Cook spaghetti. Blend tofu until smooth. Fry garlic and vegan bacon in olive oil. Combine with tofu mix. Toss with pasta. Season. Garnish with nutritional yeast.

2. Creamy Vegan Pesto Pasta
o Ingredients: 300g penne, 2 cups basil, ½ cup raw cashews, 2 garlic cloves, 3 tbsp nutritional yeast, 1/4 cup olive oil, lemon juice, salt.

o Method: Cook pasta. Sauté asparagus & garlic. Mix with pasta, zest, lemon juice, and seasonings.

5. Vegan Mushroom Stroganoff
o Ingredients: 300g tagliatelle, 300g mushrooms (sliced), 1 onion (chopped), 2 garlic cloves (minced), 2 cups vegetable broth, 1 cup coconut milk, 2 tbsp soy sauce, 1 tbsp olive oil, salt, pepper.
o Method: Cook pasta. Sauté onion, garlic, and mushrooms. Add broth, milk, and soy sauce. Simmer. Combine with pasta.

o Method: Cook pasta. Boil cauliflower. Sauté onion & garlic. Blend all ingredients except pasta. Mix sauce with pasta.

o Method: Cook pasta. Boil squash. Blend with yeast, milk, and oil. Mix with pasta. Season.
